Viticulture

+ about 35 years old vines planted in well structured clay-loam soil, rich of minerals at about 380m above sea level

+ Mediterranean sea breeze adds to freshness and complexity

+ Sustainable, biological viticulture, natural treatments to maintain the balance of the ecosystem

+ Hand picked September till October

Vinification

+ Fermented for about 15 days in big French oak barrell (Garboletto 10hl)

+ Aging for about 18 months in new french barriques
